Ingredients

  • 4 pieces (6 oz each) Sea bass fillets (Skin-on)
  • 3 tbsp Butter
  • 1 Lemon (Juiced)
  • 4 sprigs Fresh thyme
  • 2 tbsp Capers
  • 2 tbsp Olive oil

Instructions

  1. 1

Pat sea bass fillets completely dry with paper towels. Score the skin in 3-4 places to prevent curling. Season both sides with salt and pepper.

  2. 2

Heat olive oil in a large skillet over medium-high heat.

  3. 3

Place fillets skin-side down in the pan. Press gently with a spatula for 30 seconds to ensure even contact.

  4. 4

Cook for 5-6 minutes without moving until skin is golden and crispy. The fish will be mostly cooked through.

  5. 5

Carefully flip and cook for 1-2 minutes on the flesh side. Remove fish to plates.

  6. 6

Reduce heat to medium. Add butter, lemon juice, thyme, and capers to the pan. Swirl until butter melts.

  7. 7

Spoon sauce over fish and serve immediately.

💡 Tips

  • •Dry skin is essential for crispiness
  • •Don't move fish while cooking or skin won't crisp
  • •Most cooking happens skin-side down
