Ingredients

  • 1.5 lbs Large shrimp (peeled and deveined)
  • 1/2 cup Fresh cilantro (chopped)
  • 1/4 cup Lime juice (freshly squeezed)
  • 1 tbsp Lime zest
  • 2 tbsp Olive oil
  • 4 cloves Garlic (minced)
  • 1 tsp Cumin (ground)
  • 1/2 tsp Chili powder
  • 1/2 tsp Salt

Instructions

  1. 1

If using wooden skewers, soak them in water for 30 minutes to prevent burning

  2. 2

In a large bowl, whisk together lime juice, lime zest, olive oil, chopped cilantro, minced garlic, cumin, chili powder, and salt

  3. 3

Add shrimp to the marinade and toss to coat evenly

  4. 4

Cover and refrigerate for 15-30 minutes (no longer or lime will 'cook' the shrimp)

  5. 5

Preheat grill to medium-high heat or heat a grill pan over medium-high

  6. 6

Thread 4-5 shrimp onto each skewer

  7. 7

    Lightly oil the grill grates

  8. 8

Place skewers on grill and cook for 2-3 minutes per side until shrimp are pink and opaque

  9. 9

Remove from grill immediately to prevent overcooking

  10. 10

Garnish with extra cilantro and lime wedges

  11. 11

Serve hot with cauliflower rice or a fresh salad

💡 Tips

  • •Don't overcook shrimp - they cook very quickly
  • •Shrimp are done when they form a 'C' shape (overcooked shrimp curl into an 'O')
  • •Can also cook under broiler for 2-3 minutes per side
  • •Leftovers make great taco or salad toppings
