- 1/2 cup Parmesan cheese (freshly grated)
- 6 cloves Garlic (minced)
- 2 tbsp Olive oil
- 2 tsp Italian seasoning
- 1 tsp Paprika
- 1 tsp Salt
- 1/2 tsp Black pepper
- for garnish Fresh parsley
Instructions
- 1
Preheat oven to 425°F
- 2
Pat chicken thighs completely dry with paper towels
- 3
In a small bowl, mix together minced garlic, parmesan, Italian seasoning, paprika, salt, and pepper
- 4
Drizzle olive oil over chicken thighs and rub to coat
- 5
Rub the garlic-parmesan mixture all over the chicken, especially under the skin
- 6
Place chicken thighs skin-side up on a rimmed baking sheet or in a large oven-safe skillet
- 7
Roast for 30-35 minutes until skin is golden and crispy and internal temperature reaches 165°F
- 8
For extra crispy skin, broil for the last 2-3 minutes, watching carefully
- 9
Remove from oven and let rest for 5 minutes
- 10
The resting time allows juices to redistribute
- 11
Garnish with fresh parsley
- 12
Serve hot with roasted vegetables or a crisp salad
💡 Tips
- •Dry skin is key to crispiness - pat thoroughly
- •Don't crowd the pan - chicken needs space for air circulation
- •Dark meat is more forgiving than breast meat and stays moist
- •Save the drippings to make a pan sauce
