- 1/2 cup Chia seeds
- 2 cups Unsweetened almond milk
- 4 scoops Protein powder (vanilla or unflavored)
- 1 cup Greek yogurt (plain)
- 1 tsp Vanilla extract
- 2 tbsp Stevia (or to taste)
- 2 cups Fresh berries (for topping)
- 1/4 cup Sliced almonds (for topping)
Instructions
- 1
In a large bowl or pitcher, whisk together almond milk, protein powder, Greek yogurt, vanilla extract, and stevia until smooth and no clumps remain
- 2
Add chia seeds and whisk vigorously for 30 seconds to prevent clumping
- 3
Let sit for 5 minutes, then whisk again to break up any clumps
- 4
Divide mixture among 4 jars or containers with lids
- 5
Cover and refrigerate for at least 4 hours or overnight
- 6
The chia seeds will absorb liquid and create a pudding-like consistency
- 7
Before serving, stir pudding well
- 8
Top each serving with fresh berries and sliced almonds
- 9
Can add a drizzle of almond butter or sprinkle of cinnamon
- 10
Serve cold straight from the refrigerator
💡 Tips
- •Pudding thickens as it sits - add more milk if too thick
- •Can make 5 days ahead for meal prep
- •Try different flavor combinations: cocoa powder, peanut butter, or coconut
- •Use any berries: blueberries, strawberries, raspberries
