Ingredients

  • 1.5 lbs Lamb leg or shoulder (Cut into 1.5-inch cubes)
  • 1/2 cup Plain Greek yogurt
  • 3 tbsp Lemon juice
  • 4 cloves minced Garlic
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Paprika
  • 1/4 cup chopped Fresh mint

Instructions

  1. 1

In a large bowl, combine Greek yogurt, lemon juice, minced garlic, cumin, coriander, paprika, half the mint, salt, and pepper.

  2. 2

Add lamb cubes and toss to coat completely. Cover and refrigerate for at least 2 hours, or overnight.

  3. 3

If using wooden skewers, soak in water for 30 minutes.

  4. 4

Thread lamb cubes onto skewers, leaving small space between pieces.

  5. 5

Preheat grill to medium-high heat. Oil grates well.

  6. 6

Grill kebabs for 10-12 minutes, turning every 3 minutes, until lamb is cooked to desired doneness (145°F for medium-rare).

  7. 7

Let rest for 5 minutes. Garnish with remaining mint and serve with cucumber yogurt sauce.

💡 Tips

  • •Cut lamb into uniform cubes for even cooking
  • •Don't pack meat too tightly on skewers
  • •Lamb is best at medium to medium-rare
