Ingredients
- 4 pieces (6 oz each) Sea bass fillets (Skin-on)
- 3 tbsp Butter
- 1 Lemon (Juiced)
- 4 sprigs Fresh thyme
- 2 tbsp Capers
- 2 tbsp Olive oil
Instructions
- 1
Pat sea bass fillets completely dry with paper towels. Score the skin in 3-4 places to prevent curling. Season both sides with salt and pepper.
- 2
Heat olive oil in a large skillet over medium-high heat.
- 3
Place fillets skin-side down in the pan. Press gently with a spatula for 30 seconds to ensure even contact.
- 4
Cook for 5-6 minutes without moving until skin is golden and crispy. The fish will be mostly cooked through.
- 5
Carefully flip and cook for 1-2 minutes on the flesh side. Remove fish to plates.
- 6
Reduce heat to medium. Add butter, lemon juice, thyme, and capers to the pan. Swirl until butter melts.
- 7
Spoon sauce over fish and serve immediately.
💡 Tips
- •Dry skin is essential for crispiness
- •Don't move fish while cooking or skin won't crisp
- •Most cooking happens skin-side down
