Ingredients

  • 1.5 lbs Beef tenderloin (Cut into 1.5-inch medallions)
  • 4 tbsp Butter (Divided)
  • 6 sprigs Fresh thyme
  • 4 cloves Garlic (Smashed)
  • 2 tbsp Olive oil

Instructions

  1. 1

Pat beef medallions completely dry with paper towels. Season generously with salt and pepper on all sides.

  2. 2

Heat olive oil in a large cast-iron skillet over high heat until smoking.

  3. 3

Add medallions, making sure not to crowd the pan. Sear for 3-4 minutes per side for medium-rare (130-135°F internal temp).

  4. 4

In the last 2 minutes, add 2 tbsp butter, thyme, and garlic to the pan. Tilt pan and spoon herb butter over steaks.

  5. 5

Remove steaks to a plate and tent with foil. Let rest for 5 minutes.

  6. 6

Add remaining butter to pan and swirl. Pour herb butter over steaks before serving.

💡 Tips

  • •Very high heat is essential for a good sear
  • •Don't move steaks while searing - let crust form
  • •Use a meat thermometer for perfect doneness
