Ingredients

  • 1/2 cup Chia seeds
  • 2 cups Unsweetened almond milk
  • 4 scoops Protein powder (vanilla or unflavored)
  • 1 cup Greek yogurt (plain)
  • 1 tsp Vanilla extract
  • 2 tbsp Stevia (or to taste)
  • 2 cups Fresh berries (for topping)
  • 1/4 cup Sliced almonds (for topping)

Instructions

  1. 1

In a large bowl or pitcher, whisk together almond milk, protein powder, Greek yogurt, vanilla extract, and stevia until smooth and no clumps remain

  2. 2

Add chia seeds and whisk vigorously for 30 seconds to prevent clumping

  3. 3

Let sit for 5 minutes, then whisk again to break up any clumps

  4. 4

Divide mixture among 4 jars or containers with lids

  5. 5

Cover and refrigerate for at least 4 hours or overnight

  6. 6

The chia seeds will absorb liquid and create a pudding-like consistency

  7. 7

    Before serving, stir pudding well

  8. 8

Top each serving with fresh berries and sliced almonds

  9. 9

Can add a drizzle of almond butter or sprinkle of cinnamon

  10. 10

Serve cold straight from the refrigerator

💡 Tips

  • •Pudding thickens as it sits - add more milk if too thick
  • •Can make 5 days ahead for meal prep
  • •Try different flavor combinations: cocoa powder, peanut butter, or coconut
  • •Use any berries: blueberries, strawberries, raspberries
