Ingredients

  • 1.5 lbs Ground chicken
  • 1.5 cups Thai basil (packed leaves)
  • 4-6 Thai chilies (sliced (adjust for heat))
  • 6 cloves Garlic (minced)
  • 2 Shallots (thinly sliced)
  • 3 tbsp Fish sauce
  • 1 tbsp Low-sodium soy sauce
  • 1 tbsp Oyster sauce
  • 1 tsp Coconut sugar (or substitute)
  • 2 tbsp Vegetable oil
  • 1 Bell pepper (sliced)

Instructions

  1. 1

Heat vegetable oil in a wok or large skillet over high heat until smoking

  2. 2

Add sliced shallots and stir-fry for 1 minute

  3. 3

Add minced garlic and sliced Thai chilies, stir-fry for 30 seconds until fragrant

  4. 4

Add ground chicken and break it apart with a spatula

  5. 5

Stir-fry for 5-6 minutes until chicken is cooked through and lightly browned

  6. 6

Add sliced bell pepper and stir-fry for 2 minutes

  7. 7

In a small bowl, mix fish sauce, soy sauce, oyster sauce, and coconut sugar

  8. 8

Pour sauce over chicken and stir to combine

  9. 9

Cook for 1-2 minutes until liquid is mostly absorbed

  10. 10

    Turn off heat

  11. 11

Add Thai basil leaves and stir quickly - the residual heat will wilt them

  12. 12

Toss for 30 seconds until basil is wilted and fragrant

  13. 13

    Serve immediately over cauliflower rice

  14. 14

Top with a fried egg if desired

💡 Tips

  • •Holy basil is traditional but Thai basil or regular basil work
  • •Adjust chilies based on your heat tolerance
  • •Can use chicken breast diced very small instead of ground
  • •Authentic version is quite spicy - reduce chilies for milder version
